Why Ice Shape Is a Business Decision
Ice does more than cool. It changes how fast a drink dilutes, how long seafood stays fresh on display, how a cocktail photographs and how much ice a server scoops per glass. Matching the ice type to the application is one of the cheapest operational upgrades a food-service business can make.
The six shapes we manufacture cover the entire spectrum: square cube, crescent, flake, granular (nugget-style), bullet and shaved. Each has a different surface-area-to-volume ratio, and that ratio drives everything that matters.
Square Cube Ice — the Premium Standard
Square cube ice (22×22×22 mm in our SE series) is frozen hard at −20°C, which means it melts slowly and keeps spirits and soft drinks cold without diluting them quickly. The clean, geometric look reads as quality in premium bars and restaurants. If you serve drinks in glassware and want ice that looks deliberate, cube ice is the default.
Available output: 40–900 kg/day across the SE and SD series, from compact under-bar units to 900 kg/day production machines for high-volume venues.
Crescent Ice — the Dispenser Workhorse
Crescent ice (20×35×12 mm) has a distinctive moon shape that stacks evenly and does not fuse together in the bin. That makes it the classic choice for self-serve drink stations, hotel breakfast buffets and any operation that uses an automatic ice dispenser, because the cubes separate cleanly every time. It also looks striking in cocktails.
Flake Ice — the Preserver
Flake ice is thin, soft and slightly wet, which lets it mould around the product it touches. That is why seafood displays, supermarket fish counters and food processing lines use it: it blankets fish and produce, cools them fast and does not bruise the surface. Flake ice also works well in salad bars and for rapid chilling in commercial kitchens.
Our SL series produces 200–1000 kg/day, covering everything from a single supermarket counter to a processing facility.
Nugget / Granular Ice — the Chewable Fast-Cooler
Granular ice (often called nugget or pellet ice in North America) is soft, porous and chewable, and it cools drinks extremely fast because of its high surface area. It is the ice of convenience stores, smoothie and juice bars, bubble-tea shops, hospitals and anywhere the ice itself is part of the experience. Our SG series covers 60–500 kg/day.
Bullet and Shaved Ice
Bullet ice (28×40 mm) is clear and slow-melting, popular in hotels and bars where drinks are served over neat, uniform ice. Shaved ice machines produce fine, snow-soft ice for desserts, slush-style treats and decorative displays, with adjustable thickness on our SG-128 / SG-168 / SG-198 models.
Quick Comparison
Square cube: slowest melt, premium look — bars, restaurants, spirits. Crescent: stacks without fusing — dispensers, buffets, cocktails. Flake: blankets and preserves — seafood, supermarkets, food processing. Granular/nugget: fast cooling, chewable — convenience, smoothies, healthcare. Bullet: clear and neat — hotels, spirit service. Shaved: fine snow texture — desserts and slush.
Many operators run two machines — for example square ice for the bar and flake ice for the kitchen. If you are planning a new venue, our team can recommend a combination based on your menu and expected volume.
Frequently Asked Questions
What is nugget ice used for?
Nugget (granular) ice is chewable and cools drinks very fast, so it is used in convenience stores, smoothie and bubble-tea shops, hospitals and fast-food outlets.
Is cube ice better than flake ice?
Neither is universally better. Cube ice melts slowly and looks premium in drinks; flake ice blankets seafood and produce for fast even cooling. Choose by application, or run both.
What type of ice do bars use?
Most bars use square cube ice for spirits and cocktails because it melts slowly and looks clean. Some also use crescent ice for dispensing and shaved ice for specialty drinks.
Why does my ice melt so fast?
Small or thin ice has more surface area per gram and melts faster. If you want slower-melting ice, switch to larger cube ice like the 22×22×22 mm square ice from our SE series.
